Chili... and Dairy (or lack of)

So here is the thing: I eat junk food, I crave junk food. I eat sugar, I crave sugar. I eat salt, I crave salt. I eat healthy, I crave healthy foods. It's rocket science, honestly.

So after eating 2 chocolate bars and half a slice of fudge at the Maritime Fall fair, and a whole bag, yes a whole bag, of chips this weekend, Monday rolls around and it feels like it's about time to get back to healthy food... therefore setting myself up to crave more healthy food during the week. See how that works?

Thanksgiving Feast

It was a perfect Thanksgiving weekend. The weather couldn't have been better here in Nova Scotia. I was on the Eastern Shore at my parent's beautiful house and the sun was filtering through the windows all weekend. What was gearing up to be a quiet Thanksgiving with only my parents and myself turned into a bustling evening as two of my cousins joined us along with a couple of neighbours. And that's what Thanksgiving is all about- joining with friends and family, drinking some wine as you cook heart warming food, piling your plate with the Fall harvest and eating entirely way too much. What a treat.

Broccoli-Dill 'Pesto'

I remember why I so rarely make spaghetti of any sort when I'm cooking for 1- it usually makes enough to feed a family of 6. So here I am, eating pasta again for dinner, after having had it for lunch, and enjoying it fresh for dinner last night. But I can't say that I'm complaining because I'm really enjoying last night's creation.

Pot Lucks and Smashed Potatoes

Oh, what I weekend I just had. I find myself appreciating and loving my life quite often these days. The weather is great, my friends are awesome, my weekends rock, I keep busy with a job that I love and I'm thinking about and cooking food more and more, and I'm eating PB+Jam sandwiches less and less. What more could a girl ask for?

Fresh Spring Rolls

Last week I went out for dinner with Kelly to a Thai restaurant. I often find the coconut milk based curries a little too rich and some of the food too oily, but I always love the fresh spring rolls as an appetizer. Since I've never attempted any sort of fresh rice-paper wrapped spring roll I thought that it was about time. I know the rolls often include rice noodles, lettuce, carrots, fresh herbs such as Thai basil and mint and perhaps some other ingredients, but I decided to do my own thing on this one since it was going to stand in as a full meal for me.
